Want to know what we've been eating? Here's a rundown of all of the delicious things we've had so far in January.
1- Crock Pot Sunday: Green Pita Chicken
2- Honey Balsamic Chicken Nuggets with a Spinach Poppy Seed Salad
3- Tacos
4- Out to Mimi's Cafe where we had Chicken Crepes (I'm going to find a recipe to share, soooo good)
5- Hamburgers complete with homemade Hamburger Buns
6- Pizza, baked on a pizza stone with a 1/2 wheat crust
7- Baked Potatoes with Chocolate Chipotle Chili
8- Crock Pot Sunday: Cheesy Potato Casserole with Asian Salad
9- Leftovers (school started and it Monday and Wednesday are designated homework nights)
10- Bratwurst and homemade Macaroni and Cheese
11- Leftovers
12- Sweet and Sour Meatballs with Spinach Poppy Seed Salad
13- Bruschetta Chicken with Oven Roasted Potatoes, for dessert we had the best peanut butter cookies I've ever had (I used the recipe out of a Cook's Illustrated book, but this is the same)
Needless to say, we've been eating well. Every single one of these recipes was delicious and oh so tasty.
This is what we've got planned for next week:
14- Mashed Red Potatoes with Gravy and lots and lots of Veggies
15- Crock Pot Sunday: Chicken Tortilla Soup with a Cilantro Lime Vinaigrette Salad
16- Pork Chops (Thank you Julia Child!)
17- Spaghetti with a Salad
18- Leftovers
19- Date Night Out
20- Chicken & Wild Rice (need to find a recipe. . . )
21- Chicken Wraps (a Su Casa Copycat- I order it every time we go there YUM!!)

Megan, seriously I need ALL of these recipes. I never know what to make for dinner and yours sounds SO GOOD! You should email me your weekly menu and recipes (not joking). :) Hope you're doing well! I miss you!
